A hearty vegan soup with vegetable stock, red lentils, onions, kale, garlic, red pepper flakes, parsley, and lemon. Suitable for phase 2 of the 123 Diet.
- 2 Cups vegetable stock in water
- 1/2 Cup red lentils
- 1 Onion, diced
- 1/2 Bunch of kale (remove stem and roughly chop)
- 1 Clove of garlic
- 1 Tsp red pepper flakes
- 1 Tbsp parsley, chopped
- 1/2 lemon, juiced
Add the veggie stock, lentils, onions, kale and garlic to a large pot.
Bring to a boil and let cook until the lentils are tender (about 15-20 minutes).
Stir in the red pepper flakes, parsley and lemon juice.
Serve and enjoy.
